Easy Scone Recipe - Perfect Homemade Toddler Breakfast
Breakfast time. A time where everyone is rushing and moms are trying to make coffee while simultaneously feeding hungry mouths.
I wish breakfast was a relaxing time in our household. One where everyone was calm, at ease, and refreshed. In reality, breakfast usually involves impatient hungry children crying at our footsteps.
That is why when I decide to go the extra mile and make something from scratch, it has to be easy, quick, and little room for error! I love making these scones as they are super easy yet impressive! Don’t let your partners find out how easy these are since you will be super mama in their eyes.
These easy scones pair well with fruit for breakfast or chocolate for that post-dinner treat. There are so many flavour variations you can do as well. Below is my Coconut Lemon recipe and spoiler, I listed additional flavour combos at the end just for you.
Ingredients:
2 Cups All-Purpose Flour
1/4th Cup White Sugar
1 Teaspoon Baking Powder
1/4 Teaspoon Baking Soda
1/2 Teaspoon Salt
1/2 Cup Unsalted Butter
1/2 Cup Sour Cream
Splash Vanilla
1 Large Egg
1 Lemon Zest
2 Tablespoons Shredded Coconut
Slivered Almonds (to top)
Instructions:
1) Preheat oven to 400 degrees.
2) In a medium sized bowl, mix flour, white sugar, baking powder, baking soda and salt. Ensure all ingredients are evenly combined.
3) Grate butter into flour mixture ensuring all clumps are completely diminished.
4) Add in coconut & lemon zest.
5) In a separate small bowl, whisk together the sour cream, vanilla and egg until completely smooth.
6) Slowly stir in the sour cream mixture into the flour mixture. Use your clean hands towards the end to ensure all ingredients are well combined.
7) Using your hands, press the dough into a ball and pat into an 8 inch circle just under 1 inch thick. Place onto a lightly floured cutting board and use a sharp knife to cut into 8-10 triangles.
8) Transfer your triangles onto a cookie sheet lined with parchment paper.
9) Sprinkle your slivered almonds on the top of each scone.
10) Bake for 15-17 minutes until the top is a light golden.
11) Let cool for 5 minutes and serve!
