Unstoppable Energy Bites - The Perfect Snack for Mamas

I first made these energy bites around 5 years ago. My recipe has since been perfected but one thing that remains is that these little bites are always a hit in my house! Doesn’t matter how many I make, they never seem to last long around here.

Protein Energy Balls

These no bake energy bites are the perfect snack to give you that extra boost of energy. Whether you are having them with your morning coffee, or for an afternoon treat, they are the perfect pick-me-up everyone can enjoy. Not only are they super easy to make, but they are filled with nutritional value including protein & fiber.

Chia seeds are an excellent source of fiber, omega-3 fatty acids, iron, antioxidants and protein. Hemp hearts are also loaded with protein! They are a regular around here often used in salads, smoothies, parfaits, oat bowls, and even on avocado toast! These little seeds may be small but they sure have a large amount of nutrients good for our bodies & minds.

The best part about this recipe is that you can make it your own. Not a fan of coconut, try cranberries! You may also add in chopped walnuts, almond slivers, or pecans! If you are looking for a kid friendly version, simply swap out the protein powder for cocoa powder and you are ready to go! Have your child help make these too, I promise they will love mixing and rolling the balls.

Energy Bite Balls

Ingredients:

  • 3/4 a cup Almond Butter (or Peanut Butter)

  • 1 Cup Rolled Oats

  • 1/3rd a cup Honey

  • 1/3rd a cup Unsweetened Shredded Coconut

  • 1/4th a cup Chia Seeds

  • 1/4th a cup Hemp Hearts

  • 2 Tablespoon White Chocolate Chips

  • 1 Tablespoon Pure Vanilla Extract

  • 1 Scoop Chocolate Protein Powder or Cocoa Powder for a kid friendly version

  • Flax Seeds (optional)

Instructions:

Mix all ingredients in a large bowl until fully combined. Ensure all ingredients are well mixed and that there are no chunks. I usually mix for a few minutes using both a fork and spoon to blend all the ingredients. If the recipe seems on the dry side you may add in an extra splash of honey or almond butter. Once well blended, place mixture in the fridge for minimum 30 minutes. This makes it much easier to roll once ready.

Scoop the mixture into your palms and roll into little balls. As simple as that, they are ready to eat! Store leftovers in a sealed Tupperware in your fridge.
