Halloween Dinner Recipe - Easy Skillet Gnocchi Recipe for Kids
Eyeball Skewers and Witches Cauldron Mac & Cheese
Halloween in my house starts about mid-September when the weather begins getting cooler and the leaves transform their shades. Once that crips air hits my kids almost immediately begin pulling out their costumes and requesting for Halloween activities. I go into our bin in the basement and pull out some Halloween books for them, although there were a few books that stayed out all year long I will admit. This year my daughter is asking to be a witch and my son is asking to be a dinosaur for the third year in a row, no surprises there. How soon is it to commit to a costume? Nothing is more hair-raising than getting a witch costume only to be followed up with kids changing their minds.
While I begin to pull out all our Halloween decor, I thought it would be fun to plan a creepy family recipe to get my family in true Halloween spirits. How does Eyeball Skewers and Witches Cauldron Mac and Cheese sound to you? Chilling, I KNOW! This spine-chilling Halloween dinner is sure to spook your family and fill their belly’s.
We used Olivieri Pasta’s Skillet Gnocchi as the feature ingredient in these dishes. They are found in the refrigerator section of your grocery store and made with fresh ingredients and zero artificial colours or flavours. This dish is eerie and delicious at the same time. Pair it with your favourite Halloween decor and you will look like a Pinterest mama in no time.
Ingredients:
1 family size Olivieri Skillet Gnocchi or two regular sized bags
1 Onion Minced
3 Garlic Cloves Minced
Medium sized Bocconcini Container
Balsamic
Mini Tomato’s (bonus points for orange ones)
Basil
4 Acorn Squashes
Olive Oil, Salt, Pepper
3 Tablespoons Butter
3 Tablespoons All-Purpose Flour
1 Cup Milk
1 Cup of Freshly Grated Fontina Cheese
1 Cup of Freshly Grated Sharp Cheddar Cheese
Parmesan Cheese
Instructions:
Eyeball Skewers
Panfry @OlivieriPasta Gnocchi following instructions.
Add orange tomato’s, basil, gnocchi, and bocconcini to skewers.
Add edible eyeballs on the bocconcini.
Drizzle with balsamic and serve!
Witches Cauldron Mac & Cheese
Cut the acorn squash like you would a mini pumpkin, scooping out the seeds inside.
Rub the inside of the squash with olive oil, salt, and pepper.
Roast in the oven at 400 degrees for 25 minutes. (Cut a small amount off the bottom of the squash to make a flat surface. This will help the squashes not tumble over)
To make the cheese sauce, add 3 tablespoons of butter, to the pan with 1 sweet onion and 3 garlic cloves minced. Cook for 3 minutes until the onion is translucent.
Add 3 tablespoons of all purpose flour into the pan and stir for 2 minutes.
Gradually add in 1 cup milk while stirring and bringing the pan to a simmer.
When the mixture thickens, turn the stove to low and add in 1 cup freshly grated fontina cheese and 1 cup cheddar cheese while continuously mixing.
Panfry your Olivieri Skillet Gnocchi for 5 minutes following the instructions.
Mix the Gnocchi into the sauce and then scoop them into your squashes.
Bake for another 10 minutes then top with fresh parsley and serve.
